Look at those colors!!! These mixed berry muffins are easy peasy, melt in your mouth flavorful, and they also happen to be wheat free, oil free, and dairy free, all on accident! Like, what?
I can’t get over the colors, either. That’s why I had to call them Watercolor Muffins. I used spelt flour but you could totally use wheat if you want. Here is my recipe:
Preheat oven to 400 degrees and line muffin tin with 6 cute liners (double this recipe for a full dozen). Whisk dry ingredients in a bowl, whisk wet ingredients in another bowl, then mix toppings in a bowl, then gently mix together the wet and dry bowls(don’t over mix the batter). Spoon the batter into each muffin liner so that it covers the bottom, add the berries, then cover with remaining batter, then sprinkle on the topping and bake for 15 minutes, or until knife inserted into the middle comes out clean. Let cool slightly and enjoy! I ate mine plain but I’m sure a topping would be nice, maybe peanut butter??
1 cup flour (I used spelt)
1.5 tsp baking powder
2 tb brown sugar
1/4 tsp salt
1/2 cup no added sugar apple sauce
1 tb vanilla
2 tb coconut cream
Middle filling: 1 cup frozen berries (I used blueberries, raspberries and chopped strawberries)
2 tb oats
1 tb agave or honey
1 tb brown sugar
Like you think it’s just a muffin and then it’s actually a firework for your mouth!
